PROCESS WASHED
This washed, strictly high grown coffee comes from smallholder farmers in the Jinotega department of Nicaragua. Coffee cherries were hand-picked, wet milled and fermented by the individual producers. Afterwards the coffee was taken to a central location to be dry milled in order to guarantee uniformity of quality and flavor.
Jinotega is the largest coffee region in Nicaragua.
Altitudes in Jinotega range from 800 -1500 meter above sea level. The diverse micro-climates in the region present ideal growing conditions for varietals such as: Caturra, Red Catuai, Bourbon, Pacamara, Parainema and more.
Produced by small microlot farmers in the famous Cauca region of Southwestern Columbia, grown at high altitudes to produce a wonderful representative for the country; Sweet and juicy with flavors of cocoa, brown sugar & lemon. A clean, cup with a pleasing tart acidity.
