So much has changed in my world of coffee since those days. Coffee shops devoted to making great coffee were not on every block in the 70’s . Even in the Seattle region, in the 80’s, a great coffee or espresso was hard to find. Coffee stands were popping up- a few at a time at first, and than an explosion. The quality was generally not so good. By the end of the 90’s and into the next decade, everybody with a corner of property opened some kind of a coffee outlet. I was one of them.
Thanks to a few brilliant and passionate disciples in the industry, the knowledge of great coffee and espresso preparation began propagating across the land. When technology finally caught up with the passion, we tasted the advent of sublime espresso pours and enjoyed the awakening of really good specialty coffee.
